My version of potato skins ..

potato skins ..

1 medium red potato (150cal)
2 slice Kraft's fat free cheese (60cal)
1 strip calabrese salami (20cal)
green onions
salt & pepper

Total Calories: 230

Preheat oven to 375 degrees.
Peel potato, rinse, and slice into 3 flats, then chop it in half to make 6 halves.
Toss it in salt and pepper.
Cut the salami into 24 tiny pieces, I'm using this instead of bacon. Put 4 pieces on each potato slice.
Sprinkle with green onions.
Divide each slice of cheese into 1/3rds and arrange on top of potato to cover the toppings.
Put on baking sheet.
I forget how long I baked it for, just keep checking on it till it looks done.
Personally I prefer the cheese burnt.
I didn't use any oil and they turned out delicious anyways !

This was a total random "let's see what I can do with what I have" for dinner tonight.
It turned out surprisingly good.

H a l l o w e ee n . .

pumpkin carving :)

Halloween is almost here !!

I am a Halloween fanatic.

Sadly, the costume I wanted to get is sold out and the other one I can't find.

But I have backup ones, so it's okay.

I carved a pumpkin the other day, and took a ghost train through a park.

Candy and costumes and parties to look forward to !!

Going to a sold out party. It should be great =D

Probably go check out Fright Night at the PNE like I usually do.

That's it for now.

the male race .. ?

or maybe it's all people in general ..

you think he's listening, but he's really not.

Why do people ask questions, when they are not interested in the answer:
a) to pretend to take interest
b) to be polite and make conversation
c) to fill the silence
d) all of the above

the boy will say: how's your day going ?
the girl will say: oh my day started off with ..

the boy has already finished hearing and moved on to a different train of thought.

the girl will continue: an early morning jog, it was a lovely morning .. and then I went home and got ready for work. Work was ..

the boy stares at her blankly and nods. lalalala

the girl: really terrible, my boss treats me like crap, everybody there is fake and I absolutely hate it.

the boy looks up at her again: hate what ?

the girl: ...

In a situation like this:
a) the girl will get upset and ask why he wasn't listening
b) will continue to explain what she hates
c) ignore it and move on

In a situation like this. I will say go fuck yourself and don't speak to me. Such a waste of my breathe.

This was actually completely made up, but happens a lot. with many different questions. And people.

Lately, I'm not sure if I'm noticing more, or I just haven't paid as much attention before.

People are so keen on asking the question and completely disregard what the other person replies with. It is especially amusing when watching it happen between others.

I don't usually (can't say ever, but) ask people questions if I don't wanna know the answer. I just don't ask at all.

I don't know what to say . -_-"

hotpot dipping sauce ..

raw yolk dip .

1 raw egg yolk (50cal)
light soy sauce
dash white pepper
dash chilli oil
dash sesame oil
satay sauce

First, crack egg and seperate the white from the yolk. If you don't know how, google it.

You can use the white too, I just don't like to.

Then pour light soy sauce over the yolk (the yolk is not broken) so that it's surrounded but not covered.

Now, dash the ground white pepper, chilli oil, and sesame oil.

On one side of the soy sauce, put a small chunk of satay sauce and dissolve it with chopsticks, careful not to break the yolk.

Then when you are finally eating your hotpot meal, goes best with beef, poke the yolk with your chopsticks so it starts to flow out slowly but not entirely mix with the rest of the sauce.

I like to dip the food item into the yolk first and let it slightly touch the soy sauce mix just for taste.

If you run outta yolk, just crack another one in.

Hotpot season is just around the corner !

the biggest sandwich I've ever eaten .

the sandwich nazi .

Note: Actual picture of half the sandwich

http://www.sandwichnazi.com/

This guy is such a character, freakin' hilarious ..

I heard of this place through a friend, then saw a picture she took of the sandwich and I had to go try it because I love a good sandwich.

Crazy sandwiches !! For under 8$ , you get massive amounts of diff meats (imported European deli meats), cheese, tomato and lettuce on your choice of bread.

Goodbye subway, Hello La Charcuterie Delicatessen

And they run outta bread on a daily basis !

The first time I went, they had no more bread .. but I went back =)

And he remembered me, he said "ah I remember you, you came back, no bread last week"

Well, he said more than that, you will see what I mean if you go and buy a sandwich.

Highly recommended .

Cheers !

very asian ..

lettuce spring rolls ..

Note: Actual Picture

1 cup black wood ear fungus (23cal)
1 package konnyaku (20cal)
4 shiitake mushrooms (40cal)
1 small carrot (30cal)
iceberg lettuce (as you need) (2cal per leaf)
1 cup sprouts (30cal)
cilantro
green onions

Total: 150 calories (give or take)

Makes 12 rolls in total.

I was talking to somebody about spring rolls, and how brutal it is to eat the deep fried ones. They are delicious .. but so fucking unhealthy !!

This is my alternative ..

So I first, boiled the wood ear fungus, shiitake, and konnyaku .. while that's happening .. I shredded the carrots and washed the lettuce. Also chopped the green onions and cilantro.

I was missing sprouts today =(

Then I sliced the fungus and shiitake, unraveled the konnyaku.

On a big plate, take a piece of lettuce, and put some of each ingredient on. Roll it up and secure with a toothpick as needed.

For a raw version, use red bell pepper slices, normal mushrooms (i'm not sure you can eat shiitake mushrooms raw), alfalfa sprouts, carrots, cabbage (shredded), green onions and cilantro.

So instead of 70-140 calories of a deep fried spring roll, this will be under 15calories per roll.

Now for the sauce ..

chilli vinaigrette .

warm water
sugar
white wine vinegar
1 garlic clove
1 small piece ginger root
1 red chilli pepper
dash lime juice
dash soy sauce
dash white pepper
shredded carrots

My first attempt was a fail, second attempt was good =). That's not the actual picture, but it should look something like that, clear light color but with shredded carrots on top.

I decided to wing it, so I don't really know the exact amount .. just keep adding different shit till it tastes good I guess.

Take a small bowl, add hot water, dissolve sugar, pour in vinegar

Press the garlic, smash the ginger (too lazy to mince), mince the red chilli pepper, dash white pepper. Stir it around and taste.

Dash the lime juice, I found it slightly too sweet, so dashed light soy sauce (very little), garnish it with carrots.

The only thing with any calories really is the sugar, and it's an insufficient amount, so I wouldn't worry about it.

Serve everything chilled.

simply fresh ..

stir fry noodles .. ;)

Note: Actual picture

"Noodles"
0 calorie vegetable cooking spray
1/2 clove garlic (2cal)
scallions
1/4 bag precut cole slaw (25cal)
minced ginger
dash salt

"Meat Sauce"
4 mushrooms (12cal)
1 tomato (36cal)
fresh basil leaves
dash worcestershire sauce
red pepper flakes
black pepper
cilantro
0 calorie vegetable cooking spray
dash salt

Total: 75 calories

I have been eating unhealthy lately, so today I wanted to start out clean.

Should have eaten it completely raw, but half cooked it cuz broccoli is so hard to eat raw.

Mince garlic, chop scallions. Wash and chop tomato and mushrooms.

Take your non stick skillet, spray with vegetable cooking spray.

Saute garlic, scallions, and slaw, but not fully. Drizzle minced ginger. Only half cook it, you still want the noodles to be crispy. Set aside.

Respray skillet with vegetable cooking spray. Chopped tomato on one side and mushroom on the other. Break down the tomato with wooden spoon while cooking on medium heat. Add basil leaves on the tomato. Dash worcestershire sauce and red pepper flakes on tomato. Stir it and continue to break it down, its water content should make it a chunky sauce type thing.

Dash salt, very little ! Just for taste on both the mushrooms and tomato.

You can now mix it up, or if you're like me and enjoy tasting the food item individually .. then just serve beside the noodles.

Dash black pepper for taste and garnish with cilantro.

Notice I didn't cook it with any oil, I only use the vegetable spray so nothing sticks to the pan and burns. For those of you who don't mind some fat, I'd say give the noodles a drizzle of sesame oil for more flavor. Though I really liked the ginger taste. This recipe saves you from consuming gluten and a shitload more unnecessary calories.

And I had cucumber chips for an appetizer.

Makes a really good lunch.

In comparison, to let's say Earls. or any of those franchise restaurants that serve a crispy noodle bowl. I have this thing against fake asian food. lol .. sure it's called fushion . *Rolls eyes*

Earl's Hunan Kung Pao is a wok fried noodle with veggies, peanuts, and you can add chicken or shrimp. It has 1003.65 calories. You would think noodles, vegetables, and chicken should have less calories than a burger, right ? No, according to the nutritional content they provide on their website .. both burgers have less calories than the bowls do.

Okay let's talk health. I'm totally disgusted right now, The Hunan bowl has 42.12g of fat, so even more than the Bigger Better 1/2 lb Burger which has 40g. But the Hunan bowl has 3324.32mg of sodium. Holy fuck. The burger has 995mg. That's quite a difference. The burger has more saturated fat of 18.27g where as the bowl only has 4.59g. Also the fibre content is very low in both bowls and burgers.

I don't like burgers either, (grounded up proccessed meat? .. that's like death .. wait it is. =P) but I'm just comparing the two because people automatically think burgers are unhealthy if comparing to rice or noodles. And pasta, don't even get me started.
Gross.

So yah, I'm never eating at Earls, lol . Didn't mean to pick on them, but I don't eat at many other places with that sort of food either.

The next time you end up at one of these places, maybe you'll reconsider and just starve. Haha, kidding.

Cheers and have a nice day ! =)

- DIET VS LIFE -

http://www.acaloriecounter.com/how-to-stick-to-your-diet.php

It annoys me when people question me ..

"Oh you're on a diet ?" ... "What kind of diet?" ... "What, your still on a diet?"

NO PEOPLE, I'm not on a fucking diet. It's called a lifestyle you morons.

On a brighter note, read this article .. it makes total sense.

Oddly enough, I'd been through all these steps naturally .. just came across this article by accident just now though lol

The key to maintaining your eating habits (according to me) (regardless of what your aiming for) is to:

1) Do not deprive yourself of anything. Eat what you want. But in moderation.
2) Eat when your hungry, not when your "supposed" to
3) Fuck what others think or say, they can shove junk down their throats all they want .. but why do you have to follow and suffer ? You don't. Don't feel obligated to try and explain to them because, even if they understand .. they won't agree. So fuck them. lol
4) Don't kill yourself if you binge once in awhile. It happens .. we're only human. Tomorrow will be another day where you can do much better.

And folks, that is how you live the life you want. Really, it doesn't only apply to food.

Cheers.

The 272 Fast Food Items Highest In Calories

Check out your favorite fast food restaurants !!

http://www.acaloriecounter.com/fast-food-calories.php

White Castle is on the top of the list .. Jack in the Box isn't much better .

Thank god we don't have those in Canada.

DQ , BK , Arby's , MCD is very common though.

#10 on the list is DQ's 6 piece chicken strip basket going at 1270 calories. Yikes !
I vaguely remember eating that in highschool .. but haven't in many years ..

Mcdonald's actually my all time favorite .. but I rarely eat it anymore =)

Obviously I'm gonna think twice before eating at any of these places. Probably more than twice, more like quadruple. lol

Well, happy getting skinny folks . or fat in many cases . but think positive ! haha

childhood memories ..

gummi bears .. bouncing here and there and everywherre !!

http://www.youtube.com/watch?v=qR9yTK1xApc

I was just chatting on msn to my friend, and Disney movies came up.

Somehow that lead to me mentioning one of my old favorite cartoon shows that I'd used to get up early to watch every day as a kid.

Coincidentally, she used to watch it too.

How funny it is, these bears live in a tree, drink magical juice and fight goblins. =P

Sounds like the life, doesn't it ?

PNE

Pacific National Exhibition

I go to this every year, and I mean EVERY. It's tradition.

Since I've been living at this house .. (I was 4.5 years old) ..

This year is the 100th year anniversary of the PNE.

My favorite roller coaster of all time will always be the black wooden one pulled by gravity. You feel like the thing will collapse or you might get flung out while on it. It's awesome !

I like playing the game where the ball drops and bounces off pins, the goal is to catch it with the plastic thing and let it drop in the hole. I forget the name.

Won a monkey sitting in a banana. lol

Gambled a bit, drank a bit, ate a bit. Went to the marketplace, walked around the farm. I got some lavender, the scent is supposed to be calming.

Didn't go on any rides because I already went to Playland earlier in the year.

Overall, it was fun .. but I prefer to go with a few more people, makes it more interesting.

Maybe I'll go again, if the weather is nice.

camping ..

LBG camping trip 2010 .

I love camping, and growing up in BC makes it a lot more convenient.

Beautiful forests, islands and mountains close by.

We went to Victoria, supposed to camp at Shawnigan Lake .. but the campsite we went to two years ago is now a provincial park -_-"

And fire bans are super strict, but we made one anyway. lol

It was good chilling with the boys, reminiscing past vacations and good ol' drinking times.

Getting updated about our lives, and creating new memories.

Fire is such an amazing thing, loves it .

This time, I brought vegetables with me, the last time we ate meat for 3 days .. I almost died. lol

There was this cat, Rodney .. he'd catch mice and bring it to us .. cute eh ?

I only got one mosquito bite ! =O , usually they attack me like mad. But I guess this year, we went at the end of August instead of middle of summer .. so there was less. =)

My friend set my shoes on fire .. LOL .. accidentally of course . He was trying to help me dry them because it had rained the night before and filled them with a puddle of water.

So I have an excuse to go buy new shoes now .. ^^ haha

I'll probably add pictures and/or videos once they send them to me.

=)

Good times .

cirque du soleil

KOOZA ..

I went to see Cirque Du Soleil for the first time, in Vancouver .. at Concord ?

It was a good show .. these performers are so skilled and talented.

They have to act, sing, and dance while doing crazy acrobatics in costumes .. it's so intense.

Glad I went to see it, I'd like to see O though, too bad it's not playing in Vancouver.

Will have to go to Vegas for that ..

grape tomatoes ..

chunky rosemary tomato soup .

10 grape tomatoes (40cal)
1/2 clove garlic (2.5cal)
2 tbs cilantro
1/2 tsp rosemary
dash of black pepper
1 package Lipton's cup of soup, spring vegetable flavor (50cal)

Total: 92.5 calories

I'm in love with grape tomatoes, their so sweet and flavorful.

Mince garlic, chop cilantro, slice tomatoes.

Put garlic, 1 tbs cilantro, tomatoes, rosemary and black pepper in a bowl. Microwave for 2 minutes or until soft.

In another bowl, put 3/4 cup water and the package of lipton soup.

Stir in the tomato mixture and microwave 2 minutes again.

Take it out, stir and microwave for another 2 minutes.

Garnish with the rest of the cilantro.

So in 10 minutes or so, here you have .. a chunky hearty tomato soup.

If you want to make a sauce, just microwave it more in 2 minute intervals until it's thick enough.

Very tasty.

tzatziki dip

tzatziki dip . .

1 cup 1% sour cream (160cal)
1 tbs olive oil (120cal)
1/2 tbs red wine vinegar
1 clove garlic, minced (4cal)
1/4 tsp salt
dash white pepper
1 mini cucumber (10cal)

Total: 294 calories

Take your container or bowl, Mix olive oil, vinegar, garlic, salt and pepper.

Stir in the sour cream.

Stir in the cucumber. The cucumber can be diced and squeeze out all the water first.

Chill, serve cold with pita bread or fresh veggies.

Okay, so your supposed to add dill .. but I didn't have any .. so yah .

chilli

mmm .. chilli ..

3oz sirloin (175cal)
1/2 clove garlic (2cal)
1 shallot (5cal)
1 tbs chilli powder
1/3 tsp oregano
1/3 tsp cumin
1/3 hot pepper sauce
10 - 15 grape tomatoes (4cal each)
1.5 tbs red wine vinegar

Total: 234 calories

You can buy ground beef of any sort, I grounded up my sirloin steak myself.

Crumble beef into pot, use medium - high heat.

Add shallot, garlic (minced), stir with beef until beef browns.

Remove pot from heat.

Add the chilli powder, oregan, cumin and hot pepper sauce.

Put back on heat, stir in the tomatoes (blended but a little bit chunky still) and the red wine vinegar.

Bring to a boil while stirring, reduce heat to low.

Simmer for a bit, stir to prevent burning .. until just enough sauce is left but not too watery.

It's my first attempt, and that's the actual picture. I'm surprised it turned out so good.

Serve over a bed of pasta or if you're like me and don't eat gluten .. have a side salad.

a quick side

lettuce egg slaw

1 egg (80cal)
2 or 3 tsp green onion
1 tsp red bell pepper (6.25cal)
1 tsp yellow bell pepper (6.25cal)
1/2 cup iceberg lettuce (4cal)
1 tbs fat free mayo (15cal)
1/2 tsp dijon mustard (2.5cal)
1/2 tsp wasabi
seasoning salt
pepper
fresh basil (optional)

Total: 114 calories

Okay first hard boil the egg. If you don't know how, google it. And Mush it up with a fork.
I microwaved the egg cuz I'm lazy, you can google instructions on how to do that too.

Wash and chop green onions, lettuce and bell peppers into tiny little pieces.

Take a salad bowl, put the lettuce in, now add the mayo, dijon, wasabi on the center atop of the lettuce. Shake some seasoning salt to the dressing.

Next, put the peppers on top of the center pile of dressing, then the eggs, and then the green onion.

Now toss and mix well with fork and spoon. Taste it and see if you need more salt or dijon depending on how you like it.

Dash pepper to taste.

Chill in fridge until cold.

This recipe makes one serving.

healthy as it gets for ..

a 7 layer dip .

1/3 cup kraft's fat free mayo (80cal)
1/4 yellow bell pepper (25cal)
1/4 red bell pepper (25cal)
1/3 cup 1% sour cream (53.33cal)
1/3 cup home made guacamole (161cal)
1/2 cup mild salsa (40cal)
5 organic cherry tomatoes (20cal)
1 jalepeno pepper (4cal)
cilantro
green onions
seasoning salt

Total: 408.33 calories

I would say serves about 3 - 4 people depending.

So I'm using a clear plastic container that holds about 2.25 cups. I like to see the layers.
Also, I'm not layering from bottom to top, instead I'm layering it sideways so you see all 7 layers at the same time .. looks pretty.

Tilt it sideways, and start with the mayo .. spread it nice and smooth with a butter knife, then sprinkle the entire side with seasoning salt.

Add the chopped up red and yellow pepper for it's second layer. Pat it down but not so that it's mixed with the mayo, you want separate layers.

Next, load on the sour cream, again .. smooth it nicely with butter knife.

The home made guacamole (mmm soo good, look at the recipe before this) .. scoop that on and even it out.

Fifth layer is salsa, scoop it on then add the chopped up tomatoes (6th layer), smooth it out .. it'll probably sink into the salsa a bit but not to worry, it tastes great !

The last layer is the jalepeno pepper, cilantro and green onion chopped up. I took out the seeds of the pepper but that's optional.

Now the container should be mostly filled, tilt it the other way to even out the weight shift.
It should look pretty good, put it down on a flat surface and see which layer might need more stuff, then just add it on neatly with a spoon.

Sprinkle the top of the mayo with seasoning salt, before it was only on the inner surface.

Chill in fridge until cold .. then serve with chips or veggies.

I like cucumber slices, carrots and cauliflower.

When eating it, I noticed the cilantro green onion layer was hard to scoop, so dip into one of the sauces first and the leaves will stick on .. lol

This was my first attempt in making this and I didn't follow any recipes, it was an experiment.

Turned out great though =)

I wonder how it'd be with wasabi mayo or taco seasoning flavored mayo .. I skipped the cheese because I didn't have any, also saves calories .

guacamole

a quick and simple sauce

lemon butter ..

1/3 cup 67% less fat becel margarine (200cal)
2 tbs lemon juice or juice of one lemon
3.28 ml lemon zest
1/2 garlic clove minced
1/4 tsp salt
1 tsp worcestershire sauce
2 tsp corn starch (20cal)
cilantro

Total: 220 calories

Over medium heat, place ingredients except corn starch into a saucepan. Cook until the butter melts.

Bring the mixture to a low boil and cook for 2 minutes. Add cornstarch to thicken sauce.

Add the fresh chopped cilantro and serve at once.

Apparently it goes well with seafood .. I'm not sure what I'm gonna use it for, I don't feel like eating seafood .. I just wanted to try this sauce.

It's not bad.

sirloin

broiled steak .

6 oz sirloin (350cal)
seasoning salt
pepper
1 tsp corn starch (10cal)
vegetable cooking spray

Marinade:
1/3 + 1/6 cup honey (515.493cal)
1 tbs minced ginger
1 tbs lemon juice
1 tbs apple cider vinegar
1 tbs low sodium soy sauce
1 tsp sesame oil (40cal)
1/2 tsp orange zest
1/2 tsp worcestershire sauce
2 garlic cloves minced

So because I didn't throw out the marinade from the wings I made before for lunch. I'm using it on a steak for my dinner.

I defrosted the cut of beef, and scored the surface of it, about 1/4 inch deep.

Leave it in the marinade in the fridge for a few hours. Place it on the rack and season with salt and pepper.

Preheat oven to the setting "broil" .. put steak on the top rack near the element.

I like mine medium rare, but more on the rare side. So I left it in there for about 6 minutes, 7 max.

The top should be browned. While that's happening, microwave the marinade for 3 minutes or until boiling, discard the solids .. add in 1 tsp cornstarch (10cal) and microwave for 30 seconds - 1 minute .. you should have a sauce now.

I found the sauce to be too sweet, so I squeezed in some lime juice.

After you take out your steak, let it rest for 5-10 min, if you don't want it to get cold, cover with tin foil.

The sauce can now be used for dipping your steak in if needed.

wings wings wings

honey ginger

6 winglets (180cal)
1/3 + 1/6 cup honey (515.493cal)
1 tbs minced ginger
1 tbs lemon juice
1 tbs apple cider vinegar
1 tbs low sodium soy sauce
1 tsp sesame oil (40cal)
1/2 tsp orange zest
1/2 tsp worcestershire sauce
2 garlic cloves minced
seasoning salt
pepper
vegetable cooking spray

Mix everything together minus the wings and cooking spray.

Marinate wings in sauce overnight in the fridge.

Preheat oven to 425 degrees.

Spray grill rack with cooking spray, arrange wings on rack, season with salt and pepper.

Cook for about 20 minutes, take out wings, brush with marinade and put back in oven for 1 to 3 minutes.

Take out and serve hot.

So the good news is your not actually consuming all that honey. lol

salad salad salad

with olive oil dressing ..

Salad:
1 tomato (36cal)
1/2 cucumber (22.5cal)
3 iceberg lettuce leaves (6cal)
1/3 shallot

Dressing:
1 tbs olive oil (120cal)
1/2 tbs lemon juice
1/4 tsp oregano
1/2 tsp rice vinegar
1/2 tsp red wine
seasoning salt
pepper

Total Calories: 184.5

Makes 3 servings
.

I felt like having a Greek salad for dinner tonight, except I don't like olives or feta cheese. So I guess it's not really Greek after all .. lol

Anyways, wash and chop veggies into bite size pieces. Mix dressing ingredients together and drizzle on top of salad.

Serve immediately.

I don't like putting dressing on my salad directly actually, makes it soggy. I usually just have the dressing in a bowl and dip my bite of salad in to my liking.

Less calories that way too.

=)

fruit mousse

strawberry banana ..

1/2 banana (60cal)
4.5 strawberries (24.8625cal)
2 large ice cubes

Total: 84.8625 calories

Blend it all together. That's it.

I wanted to make ice cream, but forgot to freeze my fruits .. but it turned out to be good anyways.

Didn't seem watery enough to be a drink, but not thick enough for icecream.

So fruit mousse anyone ?

=)

plums ..

i love plums !

Fortunately for me, I grew up with a plum tree in my yard .. and it's still here, so at the end of every summer .. I look forward to eating a whole bunch of them.

They are really good for you, around only 40 calories !

Rich in antioxidants, high in vitamin C, fibre, potassium .. the list goes on ..

Detoxifies liver and kidneys .. something that my body highly needs.

And their such a good fruit for a hot summer day, so juicy and refreshing !

yet another wing recipe ..

- honey - lemon - oregano -

winglets / drummettes
1 tbs lemon zest
1/3 cup lemon juice (2 lemons)
1 tbs dried oregano
2 tsp olive oil (80cal)
1 tsp seasoning salt
1 tsp ground white pepper
1 tsp honey (20 cal)

Mix all the ingredients for the marinade together except for olive oil and honey.

I used orange zest cuz that's all I had but it turned out really good anyway.

Soak your wings in the marinade, leave it in the fridge for at least 30 min, up to an hour.

In your non stick skillet, use medium heat, put the olive oil in, then the wings. cook for 15 min to brown, if it seems dry, brush on the marinade while its cooking. Before you turn the wings over brush on some honey.

Now turn it over for 10 min, continue to brush on marinade, when it's almost done (juices run clear), brush honey on this side too .. cook for another minute or two then serve.

I tried this marinade with shrimp, and it works well too. I think it'd work well for bbq and grilling.

interesting eh ..

someone convert me into becoming fully herbivore please ??

http://www.vegsource.com/news/2009/11/the-comparative-anatomy-of-eating.html

"In conclusion, we see that human beings have the gastrointestinal tract structure of a "committed" herbivore. Humankind does not show the mixed structural features one expects and finds in anatomical omnivores such as bears and raccoons. Thus, from comparing the gastrointestinal tract of humans to that of carnivores, herbivores and omnivores we must conclude that humankind's GI tract is designed for a purely plant-food diet."

soft tofu soup ..

Korean styled

1/2 shallot (2.5cal)
2.5 garlic cloves
3 shiitake mushrooms (30cal)
1 oz beef (58.33cal)
2 green onions
1.5 tbs red pepper flakes
1/2 package soft tofu (90cal)
1 egg (80cal)
1/2 tomato (18cal)
2/3 cup cloud ear fungus (15cal)
seasoning salt
black pepper

Total Calories: 293.83

First off, I'd like to say the original recipe included lots of seafood, also it included olive oil and sesame oil .. but I cut it all out cuz it saves me from consuming a lot more calories. For future reference, I'd probably add sliced fish tofu or fish balls, as well as maybe 1/2 tbs chicken bouillon powder for flavor.

Put 3 cups of water in your pot, I used a non stick skillet. Add the sliced up shallot, shiitake and pressed garlic. Boil on high for 10 minutes, then turn to low medium heat and simmer for 10 more minutes. Pour it into a bowl.

Saute the beef with some black pepper, add the mushroom from your soup, maybe a few pieces of garlic and shallot too. Add the red pepper flakes, stir for 1 minute.

Put the soup back in, add the entire tofu piece in and break it apart into pieces in the soup.

When boiling, add green onions and if it's not spicy enough, add a red chilli pepper.

Crack an egg into it before serving.

I wish I had a stone pot .. the flavor of the garlic, shallot, tofu and egg mixed into the soup .. pretty good. I don't eat garlic though so I picked the pieces out.

Double the ingredients for a bigger portion, that was only for myself so yah ..

the perfect appetizer .

beef roll ups !

3 oz sirloin (175cal)
1 package enoki mushrooms (50cal)
2 tbs oyster sauce (40cal)
2 tsp sesame oil (80cal)
2 tsp black pepper
12 toothpicks
0 calorie vegetable cooking spray

Total Calories: 345 calories

Defrost the steak slightly, any cut is fine actually. Wash and cut stems off of the enoki mushrooms.

Mix oyster sauce, sesame oil and black pepper in a bowl.

Cut the steak into thin long thin slices, width should be about an inch or so.
Slice the green onions and cut the mushrooms so that it sticks out on both ends when you roll it up with the beef. Around 1.5 inches or so.

Secure with toothpick if needed. Should be able to make 12.

Marinate with sauce for about 10 min. Spray non stick skillet with cooking spray. Saute for about 3 minutes, 1.5 min each side or till it looks done.

Let it settle for a minute or whatever, juices will drip out. Serve immediately.

Soooo good ! Good drinking food.

=)

wasabi mayo ..

potato salad .

1 medium red potato (150cal)
1 large egg (80cal)
1/2 - 1/3 cup iceberg lettuce (5cal)
green onion
2 tbs kraft's fat free mayo (30cal)
wasabi
minced ginger
salt and pepper

Total Calories: 265 calories

Wash, peel, cook potato and then cube it. I cook the potato in the microwave cuz I'm lazy.

Hard boil the egg. Wash and chop lettuce into tiny pieces for texture. Chop the green onions.

Mix 1 tsp wasabi, (I use the real dark green one, it's spicier) .. and add more if not enough taste with the mayo. Add minced ginger to taste.

In your salad bowl, put the potatoes, add the lettuce, add the chopped up egg. Dash with salt and pepper, add the dressing. Mix well, refrigerate and serve cold.

I find the wasabi mayo addicting, couldn't stop eating it after a few bites.

Breakfast of the day.
_____________________________________________________________

It's now the end of the day and I just had dinner, I made a quick side salad with a cup of iceberg lettuce (10cal) and cilantro. I used 1 tbs of fat free mayo (15cal) with 1 tsp wasabi for dressing and seasoned with salt & pepper.

I think I'm gonna use this dressing much more often, it really is addicting ! lol

sangria with ..

Grenache Syrah Longue Dog

1 bottle Grenache Syrah Longue Dog, $11.99 (around or just under 600cal)
1 450mL minute maid cranberry cocktail juice (234cal)
1 450mL minute maid orange juice (216cal)
1 orange (62cal)
1 lemon (24cal)
1 lime (20cal)
1 bunch grapes (4cal each grape)
10 strawberries (55.25cal)
Dole canned pineapple (check label for calories)
1 mickey of polar ice vodka, $6.99 (around 897cal)
ice

Total Calories: 2000 +

Shit, I'm gonna have to rethink about drinking this now that I've seen the calorie content. The good news is, you usually drink sangria with a bunch of people .. in my case I had only one friend over and we devoured it in about 2 hours, and wanted more .. lol

A really good summer drink though, you can use any dry red table wine with fruity flavors.

I chose Longue Dog, because I was reading reviews on the best wines for cranberry sangrias and many people like this wine, plus it has an adorable label =) .. check out the expression on his face lol

I'm gonna add a can of peaches next time too. I only had frozen strawberries, they make for good ice cubes ^^ and remind me of those Del Monte fruit popscicles .. but if it's fresh strawberries you're using, make sure to slice them up!

So pretty much just wash all the fruit and slice it into flat rings and then halve it again.

No need to cut the grapes. We like to do shots with a piece of fruit in the shot glass as a chaser. The pineapple cut it into bite size pieces.

Mix it well in a big bowl or pitcher, poke at the fruits so the juices mix with the wine, leave it over night in the fridge for even more flavor. Serve it with or without ice.

Perfect for drinking under the sun and appreciating the good weather !

It should be just under 30$ in total.

Happy drinking !

Saturday, July 3, 2010

breakfast for the day ..

my potato egg salad

1 medium russet potato (110cal)
1 large egg (80cal)
1/2 cup iceberg lettuce (4cal)
1/8 cup shallot (2.5cal) or you can use red onion
1/8 cup green onions
1/3 cup Kraft's fat free miracle whip (80cal)
1/2 rice vinegar
1/2 tbs sour cream or butter (optional)
1/8 tsp both salt & pepper
1/4 tsp paprika
minced ginger to taste

Total : 276.5 calories

Okay first of all, red potatoes will taste better because it's more crisp. I used russet cuz that's all I had.

Second of all, I think it might taste better with 1 more egg, but I'm not sure .. I'll try it some other time.

Third, I had no celery so I used lettuce, just for the texture for when you eat it. The original recipe didn't use paprika or minced ginger, but I found the flavor to be better with it.

Fourth, obviously fat free miracle whip can't compare to real mayonnaise, but hey potatoes and eggs are already high in calories. Also, gonna add in corn niblets to make it sweeter, will try it next time.

So hard boil the egg(s), you can boil the potatoes till just cooked. OR if you're super lazy like me, I sliced the potatoes and put it in a glass measure, added water, and microwaved it for 5 minutes. lol

The lettuce, shallot, green onions should be chopped to bits.

Mix the mayo, vinegar, salt, pepper, paprika together for the dressing. Add minced ginger to taste.

Put the salad and the dressing seperately in the fridge, when it's cold enough, mix it together and serve chilled.

=)

i love salad ..

basil, cilantro, red onion ..

3 large iceberg lettuce leaves (6cal)
1/4 red onion sliced (10cal)
basil leaves
cilantro
1/2 tomato (18cal)
1/8 yellow bell pepper (12.5cal)
1 japanese cucumber (10cal)
seasoning salt
black pepper
lime juice

Total Calories : 56.5

Okay so I feel absolutely terrible, I've had bbq food 4 days in a row for like 3 weeks now -_-" .. and I'm headed to another in a bit.

But, so far today I've only had vegetables and fruit and gonna try to keep it that way.

So wash all your veggies, rip lettuce into bite size pieces and put in your salad bowl. Rip and add some basil, cilantro in. Add cucumber slices, cubed tomato, yellow bell pepper and red onion. Dash seasoning salt, black pepper and lime juice for taste. Toss and mix well.

You can eat it like that or have fat free dressing on the side and just dip in a few pieces of vegetables when you think it starts to taste bland. I like to use Kraft's fat free Italian and put alotta Grace hot pepper sauce in. I don't really eat salads with dressing..makes it soggy.

Absolutely delicious, I love the flavors of each diff vegetable.

Cheers

I follow the show Gossip Girl and it turns out she plays the character Jenny Humphrey !

Anyhow, she has a new fan ! =)

My low calorie,

Pizza Toast ..

whole wheat grain bread (50cal per slice)
1tbs tomato paste (10cal)
slice of tomato (9cal)
slice of fat free cheese (30cal)
slice of turkey (20cal)
basil
oregano
paprika
1/16 red bell pepper, chopped (6.25cal)
mushroom
black pepper
red chilli pepper
seasoning salt
cilantro
shallots
0 calorie vegetable cooking spray

Total : Under 130 calories

I woke up thinking about pizza today .. -_-"

but a slice of pizza probably equals to my entire day's calorie intake.

So this is what I came up with.

1) Toast bread in bread toaster
2) Preheat toaster oven to 400-425 degrees
3) Wash and chop all veggies
4) Line baking pan with tin foil and spray with cooking spray
5) Put 1 tbs of tomato paste on each slice of bread, spread it nicely .. then dash basil, oregano, paprika
6) Put chopped shallots, red bell pepper, mushroom on (I only used 1/3 of one mushroom so its probably one calorie or so lol)
7) Add slice of tomato, dash seasoning salt, black pepper, red chilli peppers and add sprinkle on cilantro.
8) Rip up turkey into small pieces and put a few on the tomato, put the slice of cheese on and put the rest of the turkey on top
9) Put on the center of the baking sheet and take it to the oven.

Okay, I forgot to check what time I put it in, so in the process of it .. I just kept poking at the tomato to see whether it was cooked through yet, and one side of the bread was beginning to burn so I turned it around to even it out.

Those two pictures are the actual pictures I took from my phone, I should see to investing in a camera soon though.

Anyways, it was a delicious meal.

Enjoy !

Damn it, I didn't make the goal at all. This month was a disappointment. I will do better for July.

Well the first 6 days, my calorie intake that I took down was incorrect, so I'm gonna do a 25 day review instead.

Yaay, I achieved my goal. I think I can do even better though.. and I'm gonna try to cut back on the beer. Lol

Reviving memories ..

New Brighton Park

I took a walk yesterday at my favorite park, where I pretty much grew up. The endless summer days spent there as a child. The crazy "I can't sleep let's go for a walk at 5am" days I still have now after a night of partying..

Bike riding at 3am after an early night of drinking.. hopping over the fence and into the pool in the middle of the night for a chilly swim, stoned XD ..

Drinking at 7am on the teeter totter while playing chai mui.. or just going for a stroll and taking it all in.. oh and I can't forget all the sunrises I've seen here over the years (the picture above is from my phone one morning) ..

It was so lovely, blue skies, warm sunshine .. nice to get a breathe of fresh air (well as fresh as it gets..)

There were people fishing ..

and I can't wait to go tanning at the outdoor pool !

Life doesn't get any better than this ..
